Meadowlark Bread

This whole wheat flax bread has a rich nutty flavor, and is faintly sweetened with honey and molasses. It's delicious eaten with only a smear of butter, or used for sandwiches and it makes fantastic toast. I borrowed the recipe from my aunt, who adapted it from a recipe in a Manitoba Mennonite cookbook. Locally sourced ingredients in this recipe are the whole wheat flour, flax meal, honey, and eggs. Whole Wheat Flour

I mill flour weekly, the day before I bake. I take bucketfuls of hard red spring wheat straight from the grain truck as it comes out of the field. I clean the wheat and mill it using a Magic Mill II home flour mill. This is flour that is homegrown and really fresh, a true gift from the land. (min. order: 5 lbs.)

Over and over my customers asked for a good dark rye bread. This one, made with rye flour and my whole wheat flour is similar to pumpernickel and has caraway and fennel seeds. Molasses, cocoa powder, and espresso powder give a deep chocolatey color and rich flavor. This bread is perfect for reuben sandwiches! (Minimum order is two loaves.)

My banana bread is made with my whole wheat flour and flax meal and sweetened with honey and the natural sweetness of bananas. Sunflower oil makes a moist loaf and a strong shot of vanilla plays off the honey to make a loaf that is tantalizing and healthful. (min. order: 4 loaves)

This wholegrain bread has a quadruple dose of apple with sweet bursts of caramel flavor. The bread is moistened with apple sauce and I throw bits of chopped fresh apple in the batter too. Intense apple flavor comes from the addition of boiled cider and I finish the loaves with a sprinkle of dehydrated apple bits mixed with crunchy turbinado sugar. Rave reviews, every time.
